Fast-Fermented, Artfully Delicious Dongchimi in a Jar


๐Ÿค๋น ๋ฅธ ๋ฐœํšจ, ๋ง›์€ ์˜ˆ์ˆ  ๋ณ‘์— ๋‹ด๋Š” ๋™์น˜๋ฏธ

I’m not usually a fan of watery kimchi, but I started a special Dongchimi project after watching a TV show about a healthy 100-year-old woman and her 70-year-old daughter. The secret to her longevity was eating Dongchimi regularly, and her recipe always included staghorn sea oak (์ฒญ๊ฐ).

Dongchimi has long been known in Korea for its health benefits—in the past, people even drank it to recover from carbon monoxide fumes! Since traditional Dongchimi is tricky to make, I experimented with a quick, small-batch method by slicing the radish and fermenting it in a glass jar using my leftover sea oak from Korea.

Ingredients:

  • 1 piece dried kelp (Dashima, 5×5 cm)

  • 4 cabbage core pieces

  • 1 slice radish root end (3 cm thick, chopped)

  • 3 dried shiitake mushrooms

  • 1 outer cabbage leaf

Instructions: Place all ingredients in a pot with 2 cups of water and simmer to extract the rich umami flavor. Strain the broth from the solid ingredients, let it cool down, and then refrigerate until chilled.

๐Ÿ‘ฉ‍๐Ÿณ How to Make Dongchimi:

  1. Slice and Salt the Radish: Cut the radish into broad, flat slices and salt them for 30 minutes. Do not discard the liquid from salting—pour it into a cup and set it aside.

  2. Pack the Jar: In an approximately 4-liter glass jar, layer all the basic ingredients (except the radish) neatly, and place the salted radish slices on top.

  3. Pour and Adjust the Broth: Add the cooled vegetable broth, then pour in the reserved salted radish liquid. Taste the broth and adjust: add boiled and cooled water (or purified water) if more liquid is needed, and season with sea salt to taste.

  4. Ferment and Store: Leave the Dongchimi jar at room temperature for one day, then move it to the refrigerator.
